When I was a little kid, the bakery on the main floor where mom got her hair done on Fridays had the most delicious cupcakes with lemon curd in them. They cut out a portion of the top of the cupcake, filled it with lemon curd, put the top back on and dusted them with a little powdered sugar, what a treat that was on Fridays! Thanks for the vid, I think it's time to recreate those delicious cupcakes!

MY MOM AND I MADE THIS FOR DECADES FROM MY GRANNY'S BAKE SHOP RECIPE IN LANCHIRE. WE ALWAYS USED A DOUBLE BOILER BUT I LOST IT WHEN I MOVED AND TRIED TO USE AN ALUMINUM BOWL. BOY WHAT AN ERROR. AS YOU KNOW IT TURNED GREEN. I TRIED IT AGAIN TODAY AND USED A NON-STICK POT IN SIMMERING WATER. IT TURNED OUT ALRIGHT BUT NOWHERE NEAR AS SMOOTH AS YOURS. BUT THE TASTE IS ACCEPTABLE. THANKS, STEF!!

I made the lemon curd today and it's beautuful. I used lemons from a friend's lemon tree, the variety is Lemonade, went exactly how it was supposed. My beautiful Mum loved lemon butter, she's been gone nearly three years.

I made this tonight, and it tasted WONDERFUL when I licked the spoon, so I imagine it will be great when I make a graham cracker crust tart with it tomorrow with some whipped cream. It turned out velvety and beautiful. This is the first time I've made lemon curd from scratch, and it so much better tasting than what I buy in the jar.. and I only licked the spoon when it was hot! The difference is really huge.

I've been making lemon curd since I was a kid. I love it, anything with lemon in it is great. I'm happy you made it like you did too, as I recently saw a guy making it and it put the zest in with the sugar and processed it and then cooked it on the element. The zest is part of the texture of lemon curd. But this is how I make it and after watching you, I'm going to have to make some again. Yummy!! 🍋🍋

You have no idea how much I have been craving your strawberry and lemon curd trifle. I may have to settle for a waffle trifle with homemade waffles and homemade whipped cream. Thank you for the recipe, Stephanie. I made it using a glass bowl and it came out perfectly - no straining needed. My serving suggestion: half some strawberries and add a tablespoon ( or three! ) of lemon curd. Top off with some whipped cream. It'll knock your socks off!

I always have some lemon sugar on hand. I add the zest to it and always add it to my cheesecakes when I make it. I have to try this recipe soon! I love lemon, A LOT. Lol.

Thanks for the great video. I feel like I can do this, no problem. I had read recipes but your video was the most helpful. I'm glad you mentioned the temperature. My brother LOVES all things lemon and I like to make lemon tea loaves for him. His birthday is coming up and I plan to make the curd and put in a cute jar and give it to him along with the tea cakes. I might add a bit of citric acid to some lemon juice if I can't find good lemons here.

Excellent recipe, loved this lemon curd! I like that I can use whole eggs. I tried this recipe side by side with a different recipe that calls for multiple egg yolks, and they were very similar in flavor. The other one was a bit stronger in flavor, but not necessarily any better. Your recipe is more silky and smooth, also not as thick, so depending on what it is to be used for that could be good or bad. The other recipe was simply too thick. I ended up straining and then doubling the butter for your recipe, and it will be my go-to lemon curd for sure! Thanks again!

Stephanie, your explanation is amazingggg! Your recipes are so trustworthy that if I have to choose whose recipe to make for a particular item I always choose Joy of Baking!! I watched several chiffon cake recipes and of course and made yours and although I had had a really bad time with sponge cakes and had failed 5 times, when I tried your chiffon cake I had to be successful! I've made it two times and it turned out EXCELLENT!! Now I'm in love with making sponge cakes! Can I send a pic of that cake to u through email or on Insta or Facebook, I made an orange chiffon cake and frosted it with an orange flavoured stabilized whipped cream!

I read a lot of comments about grams and cups. I come from Malta (Europe) , but to be honest i find it easier the American way , with cups, its much quicker. Tried this yesterday to spread on cheesecake. Unfortunately it did not thicken for me, so i put 2 tablespoons of cornstarch and heated it on a gas burner. It came out wonderful, though i'm curious why it remained liquid

Did you use cups? Because it can really make a difference wether you use 3 eggs or 150 grams eggs. Mine were large but 3 weren’t enough to make the 150 grams, I ended up using 3 eggs and a half. So I think your curd was runny because it didnt have enough eggs or you didnt cook it long enough

Just finished making as per your GOLDEN instructions. Superb! What I did was to increase the lemon zest intake to grind it to powder with sugar. I did not put the curd through a sieve, for the zest was pulverized and the curd was very even, silkish...your recipe is wonderful. I also reduced the sugar in half, and when the curd was luke warm and ready for the jar, I added high quality honey to it for we use honey instead of sugar in many ways. It worked well.

Thanks to you, I now bake in grams and milliliters instead of cups and ounces. I love it! It’s so much easier, especially if you want to half a recipe. I found a great app called “Kitchen Pro” that calculates the conversions for me from cups to grams. After watching and trying tons of your videos, I feel like I’ve earned a culinary degree in baking!😁
