Lemon Ginger Muffins that’s bursting with citrusy brightness and warming ginger. Both ingredients offer immune boosting properties, making these muffins not just a treat, but also a healthful addition to your day.
Ingredients:
3 cups flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 tsp ground Ginger (3 tsp will be even better )
1 cup sugar
1 cup plain yoghurt
1/2 cup oil
2 tbsp syrup
2 large eggs
Juice of fresh lemon about a tbsp depending on how you want it
Glazing recipe:
Juice of fresh lemon
Vanilla flavoured icing sugar
Lemon zest to sprinkle over the glazing
