We have two varieties of persimmon here in Italy. The one that you're eating is called "caco mela" and you're supposed to eat it as an apple ( "mela" translates to apple ), so you have to eat it when it's crunchy and sweet like you did. And the other variety is just called "caco" and it is referred to the one which is more soft

My dad have 5 trees of them is his garden . They are good and sweet but the thing is that here in lebanon if they aren't red and soft you will feel stuffs in your mouth and you will feel that you mouth is like dried (it's indescribable) but yeah we eat them with skin or without the same

I come from the part of the United States where the American persimmon is available. There are whole festivals in the fall dedicated to the fruit - Persimmon Festivals. The best treat in my opinion is persimmon pudding. It is more of a steamed pudding. It has a texture that is like a mix between a pudding and a pie. A bit rich but it tastes of lovely fall spices. There is also persimmon beer too!

In Latvia we call this a 'hurma', and yes, it tastes so good. But here's the thing, if you buy it, (for me at least) there is a 50/50 chance that it can either be sweet and delicious, or sour and disgusting, but that is usually if you buy it from a place, that is very low-quality. Most of the time, it's good.
