Chop the length of the rudder Fit stops to the steering quadrant so it cant flick right around. The inches of pitch of the prop are how far it moves thru the water in one revolution. So cutting the diameter diwn while leaving the pitch intact or even finding a similar dia prop with more pitch should help.

cable is alright. I've got an ex race boat and that runs cable but with stainless pulleys and a fairly thick cable and double clamps on the ends. I think cable gives the most feedback which I like when I'm going fast. I wanna know exactly what everything is doing. Usually the torque steer means your prop has plenty of bite in the water but mines running an outboard. Yours might need a shaped rudder to counteract the spin of the prop wash, which might be whats giving you the torque steer?

Leave the rudder. We run ones that long on race boats. Need to change the pitch of the prop not the diameter. What is the prop shaft angle? Looks like it is a fair bit and I doubt you’ll run 100mph with it like that. Needs to be around 8 degrees and you need cav plates on the back. It’ll get to the stage reel soon you won’t be able to keep it in the water.

It will start lifting out of the water! the flatter the prop shaft sits the better! as in closer to parallel to the hull the more stable it will be,pushing boats out of the water was an old way to reduce drag but now we have boosted Barra’s to do that you don’t want to run wet but still lay flat

We race jet boats and no matter how many times I do it, my asshole puckers real tight as we cross the finishline. A jet boat that's hull weighs about 350lbs with a 540 cubic inch big block and blower pushing out 2500+hp is fucking terrifying. it blows past 160mph like nothing
