You should mine a few of those stalactite looking things. They're called dripstone, they're the only way to make renewable source of lava these days. Coal's good and all but eventually you'll want to smelt stuff with lava buckets which is way more efficient. Like 1 coal smelts 8 items meanwhile 1 lava bucket smelts 100 items and you get the bucket back as well so its not like its a waste of iron or anything. Lapis, the blue stuff, you'll need for enchanting your gear. The "swimming zombie" aka the drowned doesn't normally glow, its probably your texture pack doing that. I think a zombie becomes a drowned if it becomes submerged in water for a minute or something like that. I'd also recommend using F3 to make a note of your coordinates like at least note coordinates nearby your base so that if you get lost in the caves you can at least just go to the coordinates you noted and then dig up or something. The coordinates are useful to make note of places you'll want to comeback to later on like spawners, villages etc.

Copper really has no amazing use as of yet besides the decorative blocks that you can make but that's just for building and stuff. Lightning rod and if you find a geode you can make a spyglass and then there's the archeology stuff but I feel like they put it in just to make copper useful or something and archeology spots are pretty hard to find.
