Red velvet started before dutch processing for cocoa and the alkaline cocoa powder reacted to the acids and looked reddish. Should be really smooth because of all the very fine cocoa powder.

here in Germany it is actually quite common to just put chocolate on top of a muffin. Just coat the top in chocolate but without the frosting, maybe that's what the one thing meant with milk chocolate as for frosting! :)
