I have a closed tank system. How do I know if the low pressure side of the DP is supposed to be a wet leg or dry leg system?

if it is filled with water or with any liquid then it is wet otherwise dry.

What if it’s a new install? Do I make it wet or dry? The reason I am asking is because someone messed with it before me and I don’t know if it was dry and they added liquid to it or if it was wet and the took the water out.

This is incorrect information, it is not the high pressure 50mmh2o - 10mmh2o in the closed tank, but 60mmh2o - 10mmh2o, the sum of the gas expansion pressures on the low pressure side.

I measure water level with MPX10DP or 53DP, coupled with an HX711, or 710B 24bit ADC, thus the whole cost it's around 5 to 20 bucks (depending on trasducer). Accuracy is 1mm and the size is no more than a bunch of cm3. What's wrong?

-670 is your zero point (4 mA) and Url (upper limit of the measurement range)= 20 mA Urv-20 is your value superior limit ,dude

From Engineering Tool Box: Hydrostatic pressure in a liquid can be calculated as p = ρ g h (1) where p = pressure in liquid (N/m2, Pa, lbf/ft2, psf) ρ = density of liquid (kg/m3, slugs/ft3) g = acceleration of gravity (9.81 m/s2, 32.17405 ft/s2) h = height of fluid column - or depth in the fluid where pressure is measured (m, ft) The true pressure head will include any hight differences from the center of measurement on the transmitter to the top of the liquid. Meeters such as the PX3005 can have a calculated offset added to accurately represent the height of fluid just in the tank.

not for open-top tanks, the difference in ambient pressure at the top of the tank vs. the bottom (near the device ) is negligible.
