My paternal grandfather came to Texas from Georgia in 1876 at the age of 8. His uncle had been granted a league of land here in the Piney Woods years before. Many friends & family came from Georgia after the war & settled here.

Very much enjoying this audiobook. I’m also very much wandering why the didn’t butcher and eat the steak that had its leg severed in the bogged mud at 4:14:28. All I can figure is that they already have all the meat they could eat before it would go bad, and or the adrenaline in the steer’s blood effecting the flavor and they just didn’t need it that bad. Anyone wondering, a traumatic death does make a difference in the flavor but to me it’s not that noticeable. My family owns and operates a slaughter/processing plant, and my dad has been a butcher for 40+ years. I’m the killer/ gutter, and 2 of my sisters are skinners. Beef, it’s in our blood.
