hearty soup (rough) recipe:
1 brown onion & 3 cloves of garlic (sauté)
dice:
1 carrot
1 stalk of celery
1 zucchini
4 large mushrooms
3 potatoes
add:
1.5L veg stock (extra cup water if you think it needs it)
3/4 cup of red lentils
a few chunks of fresh ginger
handful of chopped kale
salt & pep to taste
cook for 2ish hours & enjoy with crusty bread. enjoy !
