The best spaghetti sauce recipe in my opinion. Here's the strainer that makes this and many other food projects so much easier - amzn.to/2nNmSbx Spaghetti Sauce:
8 c. onions
1 c. garlic
20 lb. tomatoes
8 bay leaves
6 T. basil, dried and crushed
7 T. oregano, dried and crushed
3 T. salt
1-2 t. pepper
tomato paste to desired thickness

If you are new to my channel and Fy Nyth (Welsh for "My Nest") in general, welcome! I'm Ariel. I live off grid (as in no physical connection to public utilities) in a tiny house on wheels in the mountains of western Wyoming. I've been living this lifestyle for close to six years now and love it! What will you find if you follow my channel and watch my videos?
Real life here. I try to show the good and the bad. The ups and the downs. What works, and what doesn't. The parts I love (most of it!), and the things that suck. Not just the showroom version of a tiny house, but everyday life in a tiny house. Not just the romantic idea of "homesteading" or off grid life, but the everyday details of this lifestyle. I split my own wood for heat, carry my water by hand, and attempt to grow as much of my own food as I can between the weather and wildlife here. I hope to help others learn from my mistakes and make life just a little easier for anyone else interested in pursuing a similar lifestyle.
I live in a somewhat harsh and cold climate, but enjoy the stunning sceanery and wildlife that I am surrounded by on a daily basis. For a bit of my background, as a child, I was fortunate enough to be able to spend much of my free time exploring and playing in the woods. Little has changed now that I'm older I suppose. I moved to a place with a bigger woods and still enjoy spending my time outside gardening, hiking, exploring, and photographing the natural world around me. As the eldest of seven children who grew up in a homeschooling family, I had the opportunity, not always appreciated at the time, to learn to do quite a bit of work. I've enjoyed a wide range of jobs, everything from greenhouses and flower arranging to wilderness therapy with teens, to milking cows. Mostly, I enjoy doing the kinds of things that I think provide a real service or value to others. Some of my other hobbies include backpacking, hosting people, cooking, preserving food, anything to do with nutrition, reading, journalling, and sitting around a fire and talking to my close friends.

Hi catyear75, Does your Italian family use oregano in its sauce? I lived in Italy for 20 years, and they rarely used it. I came to the states and was surprised that most ''Italian'' restaurant chains used it.

Hello Charles! Yes my family recipe uses a small amount of oregano... I would imagine it's a regional thing, my grandparents and great grandparents were from southern Italy... Naples, Foggia, and Sicily to be precise! Even the Italian I speak is dialect I learned from them , and they were born in the 1800's! European Italians understand about 60% of what I say ...! Lol

@@catyear75 I lived in all three of those places. My ex-wife is Italian from Bari and we lived on the peninsula of Gargano (province of Foggia) Manfredonia to be exact. We also lived in Palermo and Messina in Sicily.

My Sicilian family only used fresh basil when jarring. Oregano was added when the jarred tomatoes (puree or chunky or whole) were used later on.

My food mill just came today - after processing a bushel and a half of pears with my little hand-cranked food mill, my hands were aching! I remembered seeing this in your tomato sauce video so I ordered one. All my tomatoes are currently in the freezer, so this is going to make my sauce-making SO much easier! Thank you for sharing.

I always take some juice off my cooking tomatoes for tomato juice so I don’t need to add paste. Love the juice just to drink. Love your channel. Just started watching.

Ariel, you never cease to amaze me. First I couldn't believe you stuffed all of those ingredients into those pots. Next, I would need an engineer to come over and help me figure out how to put your strainer together LOL Looks so rich and yummy.

I have had a Squeezo Strainer since 1975... would not turn loose of it for anything. Love it for applesauce and tomatoes.

Actually..i was thinking the same about yours.. mine does not have a splatter guard and spews liquid everywhere. But i still love it.....

Your knowledge from gardening to cooking, baking, and canning is amazing. I grew up on a large farm, but when it came to these topics, I headed to the barn to spend time in the loft reading, chores, caring for horses....well anything to escape the whole cooking extravaganza. While that seemed like a great way to spend my time growing up---it is clear, I should have been more attentive to learning and experiencing all the topics you include in your gardening/cooking segments. I am sure my grandmothers who always wanted me to spend time cooking and canning (but on a large farm, another set of hands outside is never rejected)---are smiling from Heaven than I am "finally" a student of yours. @@FyNyth --my grandmother who raised me was pretty cagy with other learning areas---when the television was on, I was required to knit or crochet during the program, she would check my gage at the commercials....then pull out all my stitches and have me start again. A similar approach with sewing---so those skills were quickly mastered with her "reward" system...but my only role in the garden---was weeding....with no role in food prep anything....guess she picked her battles in raising a head-strong, "I wanna go hunting with my cousins ", farmgirl.( of course my cousins were boys) -- I always thought they were the living examples of Tim McGraw's song, "Don't take the girl". My mom says my grandmother would make spaghetti sauce from tomatoes when she was a kid I’ve been subscribed for a while just to realize over the past 3 days tons of channels I’m subscribed to KZbin won’t put in front unless you hit the bell

Oh Ariel, this brings back so many memories. I used to can juice, sauce, tomatoes and marinara. I didn't use or need your strainer. For juice and sauce I would put the raw tomatoes in a pan, cook them down the puree the lot with a food processor or immersion blender. I did core the tomatoes. No strainer, no boiling and deskinning. I swear I had the best tasting juice/sauce thanks to all the pulverized seeds and pulp. For marinara, in a separate pan I would saute the onions, herbs and spices, add the tomatoe sauce, let it cook and then process everything! My favorite part of the vid was the oregano education! I thought brown oregano was normal! Not anymore!

Sounds yummy too! I just enjoy not having to peel 40 cups of onions and 5 cups of garlic cloves (and don't have a blender or food processor) so the strainer filtering out those peels after simmering all the flavor out of them works well for me. :)

Ariel, I have the same strainer, but never thought to cook tomatoes first. Also they sell an attachment for the kitchen aid that does the same thing, and saved your arm. That's what I use now, but will try cooking tomatoes first next time. Thanks for the idea.

Yah! I an back again! My Mom And Grandma was down home cooker canners..... They took the tomatoes boiled the whole tomatoes to just the outside was , I would say cooked. Took them off and put them in cold water while still cold on the outside peeled them, then started their cooking them Some when they were slightly cooked the they would quarter them and canned them...... They would make ketchup and different sauces. We had a truck garden so we had alot of everything to can. We had to since we nine in the family affair. In the cool basement Mom had three shelves that were like 2 feet deep and about 8 feet long and that did not last long..... The stoves were big !! Every thing was down home. I guess you would say we were poor.... Love watching you as I can reminiscence days gone by... You do such a good job as your personality is genuine........

I just love watching those terrific cooking videos of yours Ariel, they teach me so much. Also makes me realise how down to earth, my bog standard, basic style of cooking really is. Although my ingredients are usually home produced [ am afraid with me it is boil em, peel em and eat em, no fancy sauces or trimmings, don't have time, and usually too tired to make the effort Know you are not an agony aunt, but there it is.

I often think that the kitchens are disproportionately large in tiny houses, compared with, say, the "living space." But it looks like you do a lot of your living in the kitchen - and outdoors!

Ok....I use a power drill to clean, they make brushes for this😂. I'm seeing how that grinder would be very helpful! I've been scalding & peeling tomatoes...burnt fingers and all! Fresh herbs are the best. Cilantro was a success this year, so homemade salsa took away a lot of our tomatoes for canning. Herbs are suppose to keep deer out of gardens. In your area, we were shocked by the deer population! Whoa!

I do as you do except I dry the pulp then power it and use it to thicken my sauce then nothing goes to waste and the flavor is intensified!! Try it, it's great!

Call it marinara sauce. If you can't get fresh tomatoes, use canned tomatoes. They are picked ripe and canned immediately. Store-bought tomatoes are picked green. I make a great marinara sauce. But not as good as an Italian grandmother.

Yes, you could use canned tomatoes for this with no problem if you can't grow your own or access good local ones in season. I've always found they have a slightly off taste to me though and have never liked the results as well.

I love your cooking videos! You made it look so easy! We will be moving into our tiny soon but we only have an induction cook top. I have to learn how to use that to cook as I have been cooking with gas stove top all my life.

It seems you don't "core" the top of the tomatoes? Do you strain them out at the end?

You can use a plug-in 22quart roasting pan (if you have an outside or porch outlet) to simmer your sauce all day or overnight, too. And how is your box so pristine? Lol mine is mangled. I always wondered if you could make peach sauce with it. Have you ever tried?

Sure if you have plenty of electricity, that would work well too! Well that box hasn't seen as many years of use yet or as many small children as the one I grew up with. :) I've not done peaches with it, but I'm sure you could. I have used it for apples, various berries, bulk carrot soup, and tomatoes.

Ariel, you're more of an expert in this area than I'll ever hope to be. But in my research, steam canning might not be as safe as water bath canning (cover jars with at least 1" of water over the lids). Pressure canning might be better at your altitude. At 6,000 ft, water boils at 200F in an unpressurized container. You can almost never go wrong with a pressure canner if done properly. But I wouldn't mind one bit if I could be your taste tester and part of your quality control staff.

There has been a lot of debate about that as the USDA took quite a few years to officially "decide" that steam bath canning was safe as well. And certainly if you prefer, go with water bath canning, lots of folks do. Many people have happily canned and eaten millions of quarts of food canned in steam bath canners though too. Yes water boils at 197F here. Pressure canners do give a very tight seal. The only downside is if one explodes (I know folks this has happened too in the face in the kitchen, or think Boston Marathon bombing) which can be very serious. I have and do use them, but prefer to not do so for anything for which they are not absolutely necessary.

wondering about canning tomatoes in a steam canner? read online the acidic content isn't high enough so a pressure canner is required. just wondering your thoughts -great video.

I took a canning class, and the instructor said the hybrid tomatoes grown nowadays indeed are not as acidic as the old types, and the pressure canning is the safest.

I just had to look this up as I'd never heard of tomatoes not being considered on the high acid list. But yes, I see there is some concern in the last few years now that if you are using some of the newer hybrid varieties of tomatoes that have been bred for lower acid content, you would need to add lemon juice or pressure can. If you are using any kind of older or heirloom variety, that should still not be an issue, but you can treat them the same way if you like.

You process 100 lbs of tomatoes, well I found a coupon for a jar of salsa once 😆 Like with the apple fritter thing, it is hilarious how I keep thinking your containers are WAY over full, surely something will boil over and make a mess, yet it always cooks down to exactly the volume you have. I like all things tomato/basil and sometimes start basil plants from sprigs I get as produce.. just root em in a glass of water then move them to larger pots outside, to keep harvesting from until I forget to propagate more sprigs indoors and they freeze 🙄 Well that's enough random idle commentary to tastefully dilute a sweetnothing such as you're so pretty it hurts. ♥︎ see I'm a chef too in a way, that's not a bait and switch at all 🤣 take care gorgeous.

Well like any thing else, there is quite a range. Hey Ariel 😇👍❤🇺🇸☕ I have a question for you, that pot of Tomato sauce you brought outside looked really Good,👍👍👍 what if you didn't strain it but used that For Spaghetti sauce (sans or with meat) it just looked so Good! You certainly could if you either like the texture of the tomato skins and seeds, onion peels, garlic skin, etc. Or wish to remove those things before cooking instead of using the strainer. :) You could add salt and pepper to taste for sure, this is to my personal taste, but everyone is different. I use it with and without meat, as tomato soup, etc.

I was going to recommend you do all this outside but you beat me to it. haha All I could think of was all the cleaning that's required when doing this indoors. Anyways, great stuff!

You are one the most inspiring>>>I am tearing up>>>person I have ever seen on the internet. A woman, who has had many obstacles and has overcome them simply through forethought and making things happen. I power-watched your videos two nights ago, and for the first time saw the one detailing the circumstances surrounding your Tiny House ownership. I WAS FLOORED. I am still floored. You are the epitome of what a person can do in a Country such as ours with hard work and a zest for life. I am a Black person who has had many obstacles and overcame many obstacles; Therefore, I can appreciate what you have had to endure to get where you've gotten. I am totally surprised a magazine hasn't snatched you up. Why haven't they? Martha Stewart has nothing on you. Absolutely nothing. You are smart; you teach us a lot through your videos, always explaining things for us to understand. You are now living the dream that many would love to experience, but for various reasons are not. Whether it's fear of the unknown, money, health, etc. I am still tearing up thinking about your story. You are such a wonderful and lovely person, and I am always so happy to get a new video. I owned a group personal fitness business for 15 years; I was the one who started that craze and failed to Franchise. Didn't really know to do it. And so the copycats. I owned that business solo and started from nothing. It grew to be very lucrative, almost from the start. I was featured in Woman's World, a National Magazine. But before then, I was in two HORRIBLE marriages, very overweight, depressed, and down in the dumps. I got a push off the proverbial mountain, so to speak, from God. Lost the weight through aerobics and weight training. I learned to love myself, divorced, opened the business, and now happy to be on my own, since 1996. I closed the fitness business in 2011, and became a full time self taught Acrylic Artist. This pays the high cost of Property Taxes of the house and area that I love living in. I am semi-retired>>>I paint mainly for enjoyment, but as a bonus it is a supplemental income. My prior business has provided me with the freedom and opportunity that I now enjoy. That is the same strainer I used too, yours just looks newer than mine, it is so great and I love it as it was a time saver for sure. Once, in my younger naive years, I planted 52 tomato plants. Yes, 52! I had tomatoes out the wazoo! I always made spaghetti sauce, tomato soup, tomatoes for soups, etc....That year, I was paying my kids to pick for me while I process them, gave bushels away and frost got many more. Never again will I plant 52 tomato plants. lol I don't understand why people think you can't cook in a tiny house. If you have a stove, hot plate, etc...you can cook anywhere, even an open flame. You make your sauce the same way I did. Love it! So yummy! Hugs, Brenda

You need a nice heavy wooden table outside so you can work in a more comfortable position when straining your mix.

That’s what I was thinking. A large table or picnic table. Than when entering friends can add nice table cloths. Or if want tan hides from the elk or large craft project have more space. Also not long ago I learned add carrots to my sauce it cuts the acid. I just love your set up. I showed my son told him build this for me when I’m old. I might even get it when he’s older and grown. And get a van for traveling.

Aerial I love watching you cook and can. Reminds me of my childhood when my mother and grandmother caned and froze almost everything we ate. My grandparents lived next door and owned 14 acres. We always planted over a acre of garden. We grew everything from asparagus to zucchini, as well as several kinds of strawberries and raspberries. We also had pear trees and grapes. One of my uncles had a big peach orchard and our neighbors grew apples. So between all of that we always had fruits and vegetables fresh, frozen or canned. We also canned apple juice and grape juice. When I was real young we also raised chickens, pigs and cows.

Loved the video. Canning is great. As an aside, I just re-watched one of your earlier (early 2017) house tour videos. The comparison between then and now is great. You're much more relaxed, confident and assured in your presentation. Almost hate to say it, but more professional. Practice does make more perfect. Anyway, you're much more interesting than what's on Tv. Keep on doing your good job here. Thanks.

Hi Ariel - wow, you brought me back to my childhood - my dad canned like crazy (we had a huge garden, a couple of grape arbors, 7 large apple trees & huge persimmon tree). Pickles, jams, jellies, preserves, apple sauce... Every August into September was canning season. It was great. We had a strainer very similar only it was heavy iron (it was old to begin with & this was 50 years ago). I earned my stripes on crank dury. My arms STILL hurt! Thanks so much for the awesome videos, Ariel. They really make me smile. 🙂 You are amazing!👍

🤤 hello beautiful and Burley too, thanks for another spaghetti sauce recipe, this sauce seems to be a good choice for several recipes. I love spaghetti so I only have one question? What time is dinner 😁, i kid i kid this video goes in my food section, learned all kinds of ways to cook differently. But spaghetti, and pizza are my favorite food and I like to cook myself. I watch KZbin ive seen some disturbing videos about restaurants and fast food restaurants. No rather eat at home Ariel give Burley a hug for me and you be safe ✌🐓🤘🖖🤤😁

What a great gizmo. Love the great ideas you have. I just cut out the woody 'core' at the top of the tomato, and leave it all chunky. There are times that I like the smoother sauce too so, glad to see all your tips. Thanks for showing us how you do it. Yum!

mmm looks delicious :)..that screen works amazing (i never knew such a thing existed)...i use an old cone shaped sieve type with a wooden tool to push the juices through the screen and as you say have to skin them etc.

Hi again! ARIEL is your strainer listed below under kitchen or household? That's a slick way to do the process and I'd like one for other things. Think it an easy solution for someone to get me for Christmas! Lol! Really like the diversity of your sauce. I'm trying to find things to do to help get me through this saddest time after losing my little buddy. I always enjoy trying your tips and recipes as you know. Sorry for your loss .I lost my Domestic Cat last year aged 18 and then some horrible person poisoned my beautiful Feral Big Black Cat Brothers and Vixen that visited my Workshop everyday for food ( they worked as a team ) .Everyone is now complaining about the Mice in the workshop complex .

Before straining, just till things are soft, yes. Then till the desired thickness is achieved which varies a good bit depending on the tomatoes used. I simmered this batch for a couple hours.

She Sounds Incredibly Out Of Breath Completely !! I also make my Sauce from Scratch by Using my Own tomatoes, and I know just slicing them up doesn't get one Out of Breath like this. Hope She's ok, Idk this is my first video I've watched of hers, so I really wouldn't know if She's I'll or anything. How many quarts of sauce do you get from a 20 lbs batch? Sure sounds good!

That varies a bit with how thick you like the sauce and how juicy the tomatoes used are. I ended up with 46 quarts (from 5x that) and just enough left over for a lunch of tomato soup while I finished up canning.
