You don't need to peel young potatos like the butcher, haha. These have so delikat skin so in Poland we just wash them, boil without peeling and serve. Some people only scratch them when they want. Never should be cut like this 'cause under the skin is the tresure of vitamins! Anyway, the best way is to cook all things (veggies/fish/pierogi) on steam. Try also kapusta kiszona, ogórki kiszone - our Polish superfood or functional food! Greetings!
