If I’m not wrong he stabbed his own leg as a reminder for the humiliation his family suffered when his sister was forced to marry the blind king . And he was filled with soo much rage and hatred towards the Kauravas because the kingdom wanted his sister whom he cherished the most for their blind king. It was a great insult for him and as per religious texts I think Bhishma imprisoned Shakuni’s family until they agreed to marry his sister to Dhritarashtra.
