Once he accidentally got ink in his mouth from a pipe burst, he knew there might be something toxic in it yet he foolishly craved for more by stealing more ink bottles from other employees' desks; saying he couldn't get "enough" of it. Eventually, Thomas (the one who made the Ink Machine) found out and it leaded to a heated arguement between the two, and one of the animators (Buddy) were eavesdropping on them. So on, the more bottles he consumed, the more unhinged he got as his hatred to Bendy did a 180° flip and began to distance himself from the workers. All of this made Sammy the crazy prophet he is now in Henry's BATIM timeline.

Sure, it's likely off-screen but when you kill Papyrus in a Neutral route, he doesn't do anything unlike what he did in Genocide. The aftermath after that implies he saw it coming, I can see why's that since when he first met Frisk/Player, he has always been skeptical of the sudden arrival of a human. He would say things like: "Just give up, I already did.", "I couldn't afford to care anymore.", etc. out of the ordinary. He's simply apathetic and has a hard time trying.
