I attempted something similar with the same setup a while back while prototyping freeze drying tech that i plan to sell soon. I also own commercial freeze dryers, i can tell you mango is difficult to do in the first place. Try onions, they're pretty easy to get powder dry.

Do you have experience in mushrooms? How do they fair in the freeze driers?

@@Sam-hl1oh Great! They dry quickly and reconstitute extremely well. Slightly soggy, as if you had washed a fresh mushroom, but otherwise you couldnt tell it was freeze dried.

hey man from what i see from the video you are applying heat. Then why use freeze drying?

Hey! The "freeze" part of freeze drying is the process of removing water from the vacuum system. This means water can continue to sublimate out of the food into the vacuum and continue to dry out. This sublimation cools down the food. Pretty quickly the food gets so cold that sublimation stops. You've gotta add heat back into the food to drive the process forward and completely dry it out.
