On the coding thing, other than using raycasting or in depth algebraic calculations, what I would do is knowing the speed of the bullet and the frame rate, work out how far the bullet travels per frame, and just extend the back of the hit box that distance. This means that everything the bullet would have collided with is within the hitbox and so is detected, and the furthest collision object from the front of the bullet hitbox was the first hit. This alone won't work however if the object being shot is also moving significantly between frame, but then to fix that you just do the same for whatever that object is. Although it can't be absolutely precise, as this method detects if the two objects paths within the frame overlapped, but if played in real time, one object may pass over the others path long after the former object has already passed the latter. Hmmm
