They shouldn't. At 1 time they were almost extinct. Today they're numbers are in decline.

They were over harvested for their blue blood. Even after harvesting , they would return them to the sea but the majority died.

I think in their cooking videos it’s your choice of vegetables it doesn’t necessarily be identical to what they are incorporating to the meals the process is the same just put whatever vegetables you want Because their veges seems not available here in US or elsewhere they just grab them from their gardens
