In this comparison you need to consider that the df83v burrs are still new - do the same comparison after a few pounds of coffee

If you compare grinders, you need yo use exactly the same and equally seasoned (or not seasoned) burrs in the both. Otherwise you compare the burrs, and that's not what we expect.

The Eureka Mignon grind adjustment is horrible. If you like trying different coffees, and you switch, it takes too much time and shots to dial it back in. Waste of time frustration and coffee.

Another comparison would be installing mazzer burrs on df83v - why 500rpm ? I wold go way up do generate fines if you like more body - probably is easier to compensate the different burrs with the RPM selection

I get it - the grinders are completely different - it would be more interesting to do videos about shot consistency consistency - I have my df83 that is not consistent grinding consecutively shots - it would be interesting to know if this one is more stable and professional, solving the issues that its predecessor has. I worry about the springs to keep the top burr in check - eureka, niche, ceado and others don’t use springs - it seems a chip mechanism - in fact part of the problems of the df83 are due to the design of the top burr holder, spring, chamber temperature.

The Niche is the ugliest grinder I've ever laid eyes on. Of course looks aren't everything but if I had to wake up to that each morning I would file for divorce.

It is ugly but the 83V looks like a freaking locomotive. Wouldn’t want that in my kitchen either. Why can’t these manufacturers focus on aesthetics just a little bit?

@@andrewdavis9438 I can see what your saying. To me it's not such a bad look but I see the locomotive or an AK-47. Unfortunately function comes first and form is usually forgotten or they are more into the engineering side verses designing good aesthetics. But for the money the DF83V is pretty amazing. 10 years ago you would have had to drop at least 2G+ Unless you used the Hg1 and that's an espresso only glorified hand grinder.

@@lukesp5721 To each their own. For me, I'm willing to spend more on a better looking grinder without sacrificing quality. My wife would murder me if I put a 83V on our countertop.
