I have been doing Pest Control for 16 yrs and I have found Multiple Snap Traps with Rat Heads missing and the body still there. The only thing that was keeping the body on the trap was the Spine below the Base of the Skull with that Skull missing.

We are just at the end of having a rat problem around the outside of our house and a bit in our basement and basement walls. Had the same thing as you did. In one of the black traps it caught a mouse and the rat ate it from the waist down. Was beyond nasty. 🤢 I had 6 of those black metal traps. I screwed them to 2" x 4"s and also put in 3 screws through the tops of them. Then when they went off, the screws went right into the rats/mouse's head. The poison bait boxes around the outside of our house is what's working the best. Will continue to keep them loaded even right through winter.

Im an exterminator in NYC i work for a company called victory pest solution. Ive been an exterminator for 7 years now. Ive seen all kinds of rat cannibalism. It happens a lot. You'd be surprised how many people don't know anything about their home. I don't necessarily think it's their fault either. Most people don't know building systems or science and just take for granted that the people building or repairing their home are doing what needs to be done and are doing it correctly.
