When I do my podcast, I like to go off the cuff as if I'm meeting the person for the first time. I have a word doc with a basic structure of the show with basic topics, then just hit certain marks. I've noticed if I script things out too much, the show sounds totally canned. Which I hate. Also, on camera, I've used blue notecards before. Letterman used to do that.
