1 kg of poultry liver, or pork liver, or veal liver;
400 gr of 82% fat butter;
2-3 bay leaves;
1 teaspoon of freshly ground pepper;
salt to taste;
100 ml of wine;
3 medium onions;
2 medium/large carrots;
1 head of garlic;
