Ingredients:
1 or 2 potatoes
1 string cheese
2 eggs
3 tablespoon all purpose flour
1/2 cup panic bread crumbs
1/4 cup shredded mozzarella cheese
Salt
Paprika
Oil for frying
Instructions:
1- Peel potatoes and cut them in big chunks. Boil the potatoes until fork tender
2- Meanwhile, cook the pastrami or bacon until crispy. Chop them into small pieces.
3-Drain boiled potatoes and place them in heat proof bowl. Mash them with masher or potato ricer. Add salt and paprika.
4- Add pastrami and cheese mix until combined.
5-Use a tablespoon or ice cream scoop to take equal portions of potato mixture and form into balls. Make a hole in the center of every ball and fill it with cubed cheese.
6- Place all the balls in a baking tray lined with parchment paper and place them in refrigerator
7- Prepare the breading: in three separate medium size bowls place flour, beaten eggs and panko bread crumbs.
8- Coat each ball in flour first, then dip into beaten eggs, then roll into panko bread crumbs
9- Fill a large pot with vegetable oil (I used sunflower Oil) and heat over medium heat until it reaches 350° F
10- Deep fry until golden brown, for about 3-4 minutes
