Preacher Curl on a higher up horizontal platform. I like using a GHD or a Hyperextension

What would be the loaded stretch for quads?

Maybe a reverse Nordic curl, not sure though.

Long lunge with 90 deg joint angle in the front leg Back leg as straight as possible Knees scissoring apart

Depends on which quad muscle you want to address the most. If Rec Fem, I like doing a Back Leg Elevated Split Squat, but load the back leg as much as possible and engage that back Glute as much as possible to drive the knee back and under the foot. If VMO, Reverse Nordic EQI (Iso-Extreme). Most Lunge and Squat variations will hit Quads as well.
