Lobsters are far from the only "food" to have originally been considered "low class" that suddenly became upper class. In fact, a WHOLE lot of foods (notably seafood) have that unique history. Caviar, clams/muscles, and several notable -strange- foods that are considered delicacies have been hijacked and resold as "high class" food options, though to be fair they are normally sold as high class in areas these foods are not normally as easily attainable (Clams have a different value to a coastal village than it does to an inland city). The change in accessibility and marketing had a lot to do with it as well - look up the history on the "Chilean Sea Bass".
