i don't understand what you are doing at min 2:47 what key combination do you use? can you explain it?

I've just placed the lollipop image over the text and reduced its opacity to see the underlying text layer. Then I've selected the text by holding ctrl and clicking the thumbnail of that layer. After selecting that I've pressed ctrl+shift+i for invert the selection. Then clicked the lollipop image layer and pressed backspace to erase them.
