Also be sure u got your tuning plates in the recommended spots for your size grill. Good video on fire management. Your damper settings are spot on. My first pit is a LSG 24x60”” single door offset. Bought the best to learn on. Never smoked meat before. Good decision. Chris went over everything when I picked it up at the shop. That’s six years ago and it still looks new. I hose out the cooking chamber and firebox after each cook, let it dry, then spray a little cooking oil in it. Ready for the next one. The tuning plates in the pit really even out the temps in the cooking chamber. I’m in Mississippi so I have a cooking shed to keep it out of the weather. That makes it nice for cooking in the rain too. Your pit is tricked out nicely. We’ve got the best smokers made in my opinion. They’ll last for lifetimes.

Great video. I’m going back and forth between the LSG pellet smoker for convenience vs getting an LSG offset. Fantastic video, thanks very much for putting this one together. Very informative and well put together. I noticed you put an additional split on the coals as the other one was burning down good. I was putting it on late and was getting a smoldering white smoke as I was trying to add splits. I’m feeling very confident now to try a my first long cook on my LSG. Gonna try beef ribs . That lsg dam near runs itself as long as you know what you're doing. 💯💯

It’s older, but I’ve learned to smoke food on that thing. I’m starting a catering/food business so I knew I had to invest in a great smoker. What's good man!👊🏿 truthfully you'll be fine as long as it's about 50/50 or so.. just stay away from the pure white smoke and you'll probably be cool.. it doesn't have to be see through. It also depends on what kind of wood you're using too... some are stronger or milder than others. Hopefully that helps ✌🏿🍻💯💯

I bought a short/stout charcoal chimney (I think OK Joe brand from Amazon) and that allows me to simply pour the charcoal directly into the basket without doing what you had to do. Seems a lot safer to me.. As for fire, I've struggled with my LSG 20x42 offset for years. I've reduced the size of my splits and that was most of my issue. Now, it seems my coal bed simply disapears and then my wood smolders when adding new fuel... I think my firebox is smaller.... I have to feed it every 20-30 minutes or risk it dying down too far. Maybe my issue is that I use lump charcoal and not briquettes?

What up Chris.. thanks for checking me out and commenting. 💯 first off I've seen that shorter version of the charcoal chimney that the bottom drops out. It's definitely safer and pretty cool I might get one like that whenever this old one goes bad. But anyway.. I definitely think your issue is the lump charcoal.. while I love lump charcoal it's uneven in size and I would imagine it won't result in a solid coal bed. Try going with some regular charcoal to start your fire (also keep in mind if you have the one I think.. that ok Joe chimney is like half the size of the one I use) then add in a few pieces of wood or lump charcoal to purposely start off a strong big fire.. leave it wide open to catch really good and burn down, after about 30 to 45 min of burning close it up and leave your vents wide open so you heat your pit well and keep your fire burning strong. After that you should have a strong coal bed and you can add in your wood or lump charcoal as needed (every 30 to 60 min). Its easy bro. Just keep an eye on that coal bed as you cook along.. if you slip up and let it get too low no worries just start it back over, the same way you began. Leave the door open so it will catch quickly and so that dirty smoke has another way to get out of the pit instead of going over your food. Hope that helps!!👊🏿💯 Keep Smoking bro!

It does not open from the bottom. Its the Oklahoma Joe's Half-Time Charcoal Starter XL. I see it on Amazon, however it's still not available there... I just remembered that I got it from TrueValue. There are some negative Amazon comments... I've never had a single problem. Thanks again.. I'll try your suggestion this weekend.

What's up JW.. yea I got a pretty good one that I like that's made locally out here in AZ.. but I only use charcoal to start my LSG after that it's straight splits.. but a I do like the lump on my Weber. That LSG is so efficient I don't have to burn much wood to hold temps for hours and in the end cleanup is a breeze. ✌🏿👊🏿💯💯
