Thanks. I have a LSG offset.. You gave me ideas for the fire box. I usually warm up sticks and cook a pot of beans on the fire box.

Very nice smokers! I like Lonestar, and a few other builders. Do you own a Shirley Fabrication smoker at all? If not, you should look into them. They have some really good craftsmanship as well!

I have the large insulated smoker from lone star grills I can't get the temp to get up with water added do you use water to cook a brisket

I only use water for pork butts and picnic shoulders and its a 50/50 mix of water and my favorite beer. What I do to use the IVS as a water smoker I'll get the smoker to the temp I want then add liquid one gallon at a time. No more than one gallon in the water pan. If you add to much water or start with water in pan, it will prolong the heating up process thus wasting fuel. Here is a video on how I manage mine. kzbin.info/www/bejne/jZS7mIN-js2gmKc

How’s the bark development when you use water? I imagine it’s better on the offset?

The bark is better in the offset. I have had some people tell me that I don’t need to wrap the brisket in the Insulated. That there is plenty of moisture that builds up in it. I do need to give that a try though. Thanks again appreciate you watching.

New subscriber here! In your option is it safe to say there is a better smoke profile on the meats with the offset? I mean smoking a brisket or butt in both, can you tell which is which with regard to smoke profile?
