I got fresh wood ear mushrooms. Making stir fry with chicken, garlic, onion, veggies and mushrooms. Got fresh shitake as well. mushroom powder stock, soy sauce, premium oyster sauce, pagoda brand Shaoxing rice wine, sesame oil. Veggies got carrot, celery yu choy, Napa cabbage, red cabbage (I love cabbage but hate the regular one) green onion, celery, bamboo shoots, water chestnuts, baby corn, green onion. Did I forget anything lol. Oh 5 spice powder. Served with home made Sichuan chili oil and Nikishi rice. Stir fry is my favorite. Eat it all the time.

I'm so excited to make this recipe. I've got my mushrooms (dried) and black fungus (also dried) soaking. I love black fungus so much, but haven't cooked with in it probably over a decade. Oh, since you've helped me with this recipe, I wanted to share a tip with you that I recently learned that's been a game changer. When you slice your chicken, if you cut against the grain, the chicken will be so much more tender. Anyway, thanks again for this awesome recipe!

In my house, we usually don’t blanch the meat, and we use the sauce as marinade too. No time for extra steps when you’re hungry and there are 5 other hungry mouths to feed! Everything goes straight into a searing hot wok. But it makes for a fast and fairly nutritious meal. Mushrooms can be swapped with fried tofu puffs or onions or even Chinese long cabbage and carrots to make it a one-wok meal when I’m home alone and I don’t want extra dishes to wash. This recipe is incredibly versatile! Thank you DY for introducing it to the world.

How funny, I just got some wood ear mushrooms! I had it in a stir fry but I don't think I seasoned it enough, maybe because it was heated up in boiling water from its dried form. I'll have to try this and use a veggie alternative to chicken! Thanks!

Dan-Yul, why do we blanch the chicken first before we stir-fry it? Does that make it softer, more tender than just stir frying from the beginning?

from experience with other velveting stuff if you throw it straight into a hot oiled pan the starchy coating will set on the pan and get kind of gross! precooking it in water or deepfrying if you can be bothered (i know i can't, i have a little australian kitchen not a chinese restaurant setup with a big vat of oil to use) prevents that from happening

Amazing recipe. I just substituted the water in the sauce with homemade chicken stock with no salt. My wood ear mushrooms didnt snap and crackle 🤷🏽♂️

Another way to make the chicken breast soft and velvety is just marinate it for 10 min or so with baking soda then wash it off. Promise you the breast won't be dry af learned this from Seonkyoung.

Love this, it’s not something I would go for because the Chinese food velvet meat texture, while fascinating, is very unusual to me. However you just made it so accessible. My weekly stir fry is stir fried fresh ramen noodles. The noodles are always available at my local mart or Whole Foods and I can cook them quick and throw them in a pan with fish sauce, soy, brown sugar, butter and Parmesan with whatever veg I have around and it never fails me.
