I "AGREE", too!! The DARK meat is where all the flavor is....THIGHS are my favorite. That's the only kind of chicken I buy any more. It's SO much better!

Tis because the breast contains less fat... and as research has showen that the fatty acid structure in chickens dramaticaly changes when they are kept and raised in big barns with no sunlight and on a very bad grain and soy diet... the actual omega 3 6 9 ratio gets totaly messed up and makes the chicken inflamatory to our system...to all our organs and skin... and in the long run they will make sure our body cells get zo disoriented that we will develop cancer... so thats why if you cant or wont get an organic free range chicken... you are best to go for the cuts with the least amount of fat...in this case ... the breastmeat

Another great video! My oldest kids have left the nest for 1 year to travel so I have taken this opportunity to make 30 days of freezer meals for myself and other daughter for $200 (this is Canada). I just started watching your videos recently. Loved I have found someone who gets clearence produce as much as I do. It's definately a great way to save money. My dad worked in a supermarket in local area here for a a couple of yre when I was in my teens and showed me best times of day best to take advantage of clearance. I watched you struggle like most of us with the garlic peeling the outside before cutting it. Try this, put them in a tin can with a lid and shake for a bit. I think the can has to give it some distance to toss back and forth. All the outside skin will be off. It's amazing!

If you have a stand mixer, making keto dough is easy. Prep your eggs and almond meal in the mixer. Then add the cheese mixture to it, lock the head and turn on high. Viola it’s mixed! Those sausage biscuits definitely looked good. I’m going to try them. Breakfast is hard for me as I prefer more carb meals then.

I love that you two collabed(that’s a word, right??😂) I don’t do Keto, or any other diet. But thank you for the ideas as recipes are just guidelines & you can adapt them to your needs, tastes, even your cooking vehicle(crock, stovetop, oven, instant pot, etc). I feel like the both of you do very relatable meals, dishes that are common to most people, who don’t want labor intensive recipes & just need to get your kiddos & hubs fed. Plus, they are just good! Great recipes. Thanks for sharing and showing how to put them together. I noticed you were having trouble with your cutting board moving around on you. I have a very good tip for you. just put a wet cloth or some wet paper towel under the board and it won't move around.. hope this helps.

I was wondering though… why iodized salt instead of something with more flavor and trace minerals like pink Himalayan or redmond real salt? Is it an iodine thing? I’m pretty new to keto but I thought it was best to go with something like that instead of regular table salt. Either way, I’ve found that Redmond real salt has a much more savory and delicious flavor to it. Thanks again for sharing - I’ve never done freezer meals but am looking for a way to make life easier and eat out less. So I look forward to trying some of these!

Late to the game on this video. These recipes sound yum & I'm adding this video to my saved recipes folder. A tip for you on your fathead dough for the sausage & cheese biscuits. Add the almond flour to the cheese & stir up then add the cream cheese and 2tsps-1tbsp of butter. Microwave & stir up until all melted & combined then add your egg & mix. Easier to stir up (I'm one handed & found this method so much easier) & that added little bit of butter makes the dough less sticky if not sticky at all.

Thanks for sharing these recipes! I am kind of burnt out with my standard low carb keto meals. If the spouse is on board with the pulled pork chili, I'm going to give that one a whirl in the very near future. I love anything I can throw in the crockpot. I'm also excited for the braziliian chicken because I ALWAYS need something new to do with chicken. Lastly, I am pumped about these sausage and cheese stuffed biscuits! Those would be great to prep on Sunday for an easy grab and go breakfast during the week. For your biscuit dough, I find that it's easier to melt the almond flour, mozzarella and cream cheese all together (microwave for 1 minute, stir, then microwave for another 30 seconds) then add in the egg. Refrigerating for a little bit definitely helps with pliability and the cold water when handling is a pro-tip for sure! Coconut oil or olive oil on the hands (depending on the flavors you're going for) also helps. That dough is irritating to make but it is SOOO yummy! Lol. Thanks again for the great video! P.S. have you ever read anything by Denise Swanson? I just finished a cozy mystery of hers that I enjoyed quite a bit: "Welcome back to scumble river". My library had it on the Hoopla app.

Your way of cooking really resonates with me. We are a family of 7 and even though one has already left home, it's still a bunch of teenagers to feed. Simple, frugal meals in larger quantities are the way to go. And yes, if i'm going to make food, I'll make a larger batch for at least 2 full meals (1+ next lunches at school). Saves time, dishes and money. chicken breasts are overrated. Gosh, I love thighs.

Lasagna does take a lot of prep. I only make it about twice a winter and freeze it in portions for the two of us which is about 4 dinners each time (after originally cooking). We are also picky about the brand of ricotta and mozzarella so I wait for sales. Have a wonderful week.

Yes, lasagna takes so long. I made an eggplant lasagna last night took hours but the trick is to make a double portion and freeze the extra portion in parchment paper wrapped with foil in freezer ziplock bag. I'll try this Mexican version. For Keto please cut the onions and garlic to a 1/3-1/2 an onion. The carbs add up but its necessary to add some. I was able to add a little bit of fresh and powdered onions and garlic for flavor.

It's a great tip to make stew type keto meals and eat that if you're dieting but then serve the same stuff over rice or with potatoes for children/family members that don't need to be on a diet ,so much easier than making separate meals for everyone.

With the roast chili, could you have used your Instant Pot as a slow cooker versus a pressure cooker to get a similar chili as in your slow cooker? I'm pretty new to Instant Pot, so I could be totally off. Love your channel Christine!

Try making fish stew in that coconut sauce, adding more tomatoes, colored bell peppers and tilapia marinated with salt, pepper and lime juice it's a famous Brazilian recipe named moqueca. I made my breakfast sausage biscuits with coconut flour since we have a nut allergy in the family. The dough was pliable but a little crumbly after mixing. Had to use hands lol. Thank you for these recipes!

I discovered the trick to lasagna is pre-bought or pre-made sauce you can just reheat - thaw some frozen spinach - then cook the meat and reheat with the sauce while the noodles are cooking. You can also try a meatless or chicken pesto lasagna - just use precooked chicken and shred in advance!

Hi! First time commenting here. First, may I say, you look especially gorgeous! I love these recipe ideas! Here's a tough request: fairly low cost; fairly low carb and yet LOWER calorie, high protein, and yet some richness ( low fat cheese, Greek yogurt, cottage cheese in the mix),and lots of veggies incorporated for bulk/health. Even perhaps incorporating the "no calorie noodles/rice"-- which I haven't had much success with (too watery) or the "half calorie" rice where you cool down rice (perhaps works with other starches, ie, pasta) overnight, so that the starch becomes (digest) resistant, and much less calories are absorbed. I need to keep blood sugar balanced, yet feel satiated to succeed in weight loss goals. Thank you for what you do! God bless! 😻

Tabasco/cayenne/pepper flakes makes dishes spicier when you add it early on if you add it towards the end the spice will be more manageable. Tabasco alone would have been more than enough, though.

I make Keto biscuits using a fathead dough all of the time and I’ve never had to hold the dough in the fridge. This is what this dough basically is. Fathead dough based in the movie Fathead. You may get want to look up fathead dough (but you probably already are familiar with it lol). That’s all that is. Great video and awesome recipes! Love Jen already and she is a prep monster!

I am from Louisiana but hubby is from up in the mountains...apparently no pepper of any kind grows there or is even sold there...he still complains after 40 years if their is a single flake of red pepper so I just cook everything without it...even Cajun food! I just add Tony's or Tabasco to my own food.

As I understand it, the obsession with the breast meat is lower amounts of omega 6's. The omega 6's trigger the inflammatory process in many folks, and the dark meat in poultry have high amounts of it. In all honesty though, I like the darker meats, but my joints don't.

I didn't know about the high omega 6 in dark meat. I'm disabled due to several very painful conditions. I guess I should switch out to the breast meat instead. I DO love the dark meat, though….so much more flavor! This'll be a hard to decision to make Lol !!

@@cinderellsworth I eat lots of grass-fed butter so I can get the CLA to counteract the inflammation of fibromyalgia and other conditions. I still eat the dark meat chicken because it has good flavor and nutrition aside from the omega-6 issue.

I like recipes that are keto for me and I can also add non keto sides like potatoes or Mac and cheese for hubby. If your doing keto be careful with salsa or hot sauce I made salsa chicken only thing in it was chicken salsa and seasoning and it kicked me out of ketosis! I've heard tomatoes onions and peppers can kick some people! I love keto chili but miss the crackers. I'm too lazy to make keto crackers! All the food looks so good! And you look beautiful today!
