I’ve used a trick I’ve learned from my grandmother which is to beat the egg whites separately and mix them into the batter. The cake turned out even more fluffier 🙂 Thank you for sharing this wonderful recipe 🙏

I had to come back and urge you guys to make this cake, it’s super easy and really delicious. You leave the cake in the fridge and after a couple hours it turns into this amazing summer dessert. Thanks to the uploader for sharing the coconut flour version as well as almond flour is more expensive 🙏

I stared Keto 3 weeks ago for the first time. I love sweet breads. That's the only thing I miss. So I've been following her videos because they are so simple to follow and don't waste my time. So, I just made this lemon cake but only half portion and I used an air fryer box style oven. I made the frosting with butter and added cream cheese. Omg, this is the best lemon cake so far. Its super delicious and fluffy. Very lemony. 🍋 Thank you for your videos.

You can omit the baking soda, but it does make the cake softer. You can replace the whipping cream with coconut cream, yogurt or sour cream. I am unable to advise on the meringue as I have not tried that.

So I have a whole lot of lemon juice (bottled in the fridge), and I don't have a lemon zester. So if I bought one and a fresh lemon or two, that would negate the usage of the juice. So any suggestions for doing this without lemon zest? Also does the coconut flour version taste like coconut?

You can omit the lemon zest and just use the juice. With the lemony flavor you can't really taste the coconut flour

Lemon zest is obtained from scraping the rind or skin of the lemon by using a grater. It adds more lemon flavor to the cake.

Yes you can freeze the cake for months. But I wd suggest freezing without the frosting.

I measured the 120 gr of butter for the frosting and it didn't correspond to 1/2 of cup.i decided to trust the 120 gr but the result came out very buttery and oily.i think 120 gr is not 1/2 of a cup..would you mind reconsider this specific measuring? The rest of the recipe came out gorgeous😁

1 cup of butter is 227 g so half cup is 113 g which I round up to 120 g. This is based on US cup. It is always best to weigh ingredients for accuracy as not all cups and spoons are the same everywhere. The frosting must be chilled before using. If you find it a bit diluted then just add more powdered sweetener. Glad the cake turned out well. Thanks for your feedback 😊

Frankly I have not tried that but I think you can do that because coconut flour is made from coconut meat that has been dried. But it has to be very fine in order for it to absorb the liquid effectively.

Yes. Coconut flour is very absorbent hence will bulk up after absorbing the liquid and eggs. That's why only a small amount is required. And that is why using coconut flour is cheaper and healthier too.

You’re probably getting the white pith instead of just the yellow rind. Don’t grate too hard. The pith is bitter.

I was so excited to make this and it failed for me. My cake batter was clumpy and my icing is so clumpy I think I’m going to toss it. I’m so sad. Not sure what I did wrong. 🤪

I don't think you needed to toss it. You could just mix it with a hand mixer instead of whisking, that should get rid of the clumps. Make sure to sieve your flours and the butter should be soft, not cold.
