What do you recommend for getting the scratches out of the bevel in order to return it to the out of the box look? I have an Illuminous 5 that I scratched up trying to sharpen.

very fine grit sandpaper, or send it back in for a spa treatment.

Where did y’all learn to sharpen on a belt sharpener? Are the courses available that y’all had to take? I can’t seem to use a belt sharpener to save my life and I have the work sharp belt sharpener for my convex knives.

This type of strop works great but will convex the edge slightly.
