I'm living in The Netherlands and we have quite some refugees from the Ukraine (mainly from the Mariupol area) where I live. A week after they arrived I was walking with my dogs, and two of the young Ukraine guys were greeting me (which is a habbit in the area where Iive, you greet everyone even if you don't know them) but in dialect, not even in Dutch! At the fourth of May we have something to remember the fallen soldiers during WWII, and a few Ukraine women placed flowers at a local monument, they stole my heart.. Their men are still fighting in the Ukraine so this isn't an easy thing to do...

BBQ pork ribs, now that is something this Texan knows about. Your process is similar to what I do except I use an enclosed wood fired smoker. I do wrap them in foil for period of time. I use a dry rub similar to what you did but with different ingredients. No sauce on mine. When they are done they are falling off the bone tender and finger licking good. Yours look delicious too. Wish we weren’t half a world apart. We could have a rib cooking contest and compare recipes. Blessings to you and Pavlo.

What kind of wood do you use in Ukraine? Here in Texas we have three main types available; hickory, oak or mesquite. Most people use mesquite because of the unique flavor but any one of the three works well. Pavlo better behave, you are pretty good with that meat cleaver.
