Does it not occur to all of you that she IS being watched literally the entire time she is being filmed? Most of what we see is staged anyway. From what I have seen on other channels, if a monkey is stressed or unhappy their behavior will show it. You can train them to perform tasks but their overall demeanor will show if they are stressed or not. Lucky seems perfectly happy in her environment.
