Dude don't force her to watch it if she's not into it! She won't fully enjoy it if she only feels obligated to watch and not really watching it because she truly wants to. An epic tale like OP, you gotta fully immerse yourself to really understand the depths and connections things will happen later on in the show! 1000+ episodes indeed is a long commitment to make so it's understandable some people might not want to go through it. Ofcourse as a long time fan of OP I do hope she can continue on this journey with you but with a more open minded view as this is such an amazing story which I want newer audiences to get the same thrill, joy, sadness and everything inbetween to experience as much as us who have been following this story for a long time has had the chance to!!
