玫瑰荔枝覆盆莓果醬
材料:
冷凍覆盆莓500公克
荔枝去殼去籽500公克
二砂糖600公克
檸檬汁15公克
玫瑰純露50公克
做法:
一、冷凍覆盆莓解凍半小時。
二、荔枝洗乾淨後剝殼,一顆果肉剝三塊,秤重500公克。
三、覆盆莓用果汁機打均勻,過篩去籽。
四、取一耐酸寬面深鍋放入荔枝果肉、二砂糖、覆盆莓果泥,中火加熱至微微滾沸,熄火。
五、將烘焙紙剪成落蓋,貼著果醬,防止小昆蟲進入。室溫下放置一個晚上。
六、第二天將玻璃容器煮沸10分鐘、瓶蓋浸泡熱水5分鐘後晾乾。
七、從裝果醬的鍋中取出烘焙紙,食材用大火煮沸,不斷攪拌並撈去浮沫。大火續煮10至15分鐘(小心熱汁噴濺)。
八、取數滴果醬滴在冷藏過的盤中,將盤子傾斜,若果醬流速緩慢即可倒入玫瑰純露,再沸騰即熄火。
九、將果醬盛入玻璃瓶中,旋緊瓶蓋,倒扣放涼。

500g frozen raspberries

method:
1. Thaw the frozen raspberries for half an hour.
2. Wash the lychees and peel off the shells. Peel three pieces of one pulp and weigh 500 grams.
3. Beat the raspberries evenly with a juicer, sift and remove the seeds.
4. Take an acid-resistant wide-faced deep pot, put lychee pulp, sugar, and raspberry berry puree, heat over medium heat until it boils slightly, and turn off the heat.
5. Cut the baking paper into a drop cover and stick it to the jam to prevent small insects from entering. Leave overnight at room temperature.
6. The next day, boil the glass container for 10 minutes, soak the bottle cap in hot water for 5 minutes, and then dry it.
7. Take out the baking paper from the pot containing the jam, boil the ingredients over high heat, stir constantly and remove the foam. Continue to cook on high heat for 10 to 15 minutes (be careful of hot juice splashing).
8. Take a few drops of jam and drop it on the refrigerated plate, tilt the plate, if the flow of the jam is slow, you can pour the rose hydrosol, and then turn off the heat when it boils.
9. Put the jam into a glass bottle, screw the cap tightly, turn it upside down and let it cool.
