smoke generated from incomplete combustion of oil or fat is more carcinogenic than smoke from wood (and also doesnt taste as good). if possible, it would be better to ignite wood chips and then have them smothered in the pressure cooker, or have aluminum foil such that it will smother itself at some point to generate smoke. and ideally, open the pressure cooker near good ventilation (outside or directly under a vent fan) as there will be carbon monoxide.

So basically never eat anything BBQ'd over smoldering coals as the fat never had a chance to completely combust... Get out of here with your pseudoscience please... This technique has been used in China for centuries. Many Middle Easter countries have some national dishes that employ the exact technique to perfume cooked rice. 🤨

When doing long bbqs on indirect heat, it is highly advised to use a drip pan so those fats never combust. in short, direct heat cooking, it is unavoidable. there is a big difference, however, in open air bbqing and over high heat, and smoking, in which you intentionally trap the somke generated to expose your meat to it for flavor. This very much real science. Yes, techniques involving the smoking of vegetable oil have been used for a long time. The use of these techniques have also been epidemiologically linked to lung cancer.
