Without all the fuss of gingerbread cookie cutouts, these bite-size cookies are soft, chewy and nicely spiced.
Prep Time: 15 minutes
Cook Time: 10 minutes
Total Time: 25 minutes (+ 20 minutes chilling time)
Makes: 12 servings
Ingredients:
1 1/3 cups all-purpose flour
1 tsp baking soda
1 tsp each ground ginger and cinnamon
1/4 tsp ground cloves
1/4 tsp baking powder
1/4 tsp salt
1/2 cup butter
1/3 cup brown sugar
1/4 cup granulated sugar
1 egg
3 tbsp molasses
1 tsp vanilla extract
1/2 cup Milk Chocolate Holiday M&M’s
Instructions:
In bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, baking powder and salt; set aside.
Using electric mixer, beat together butter, brown sugar and granulated sugar until light and fluffy, scraping down sides of bowl as needed. Beat in egg; stir in molasses and vanilla. Stir in flour mixture just until blended.
Line 8-inch square pan with enough parchment paper to overhang edges. Press dough evenly into pan; cover and freeze for 20 minutes.
Preheat oven to 375°F. Lift dough out of pan and transfer to cutting board; remove parchment paper. Cut into 1/2-inch squares. Arrange bites on parchment paper-lined baking sheet, about 2 inches apart.
Top each piece with Milk Chocolate Holiday M&M’s. Bake for 8 to 10 minutes or until set around edges but still slightly soft in center. Let cool in pan slightly. Transfer directly to rack; let cool completely.
Tip: If desired, drizzle with prepared royal icing for a classic gingerbread pairing.
