It's a regular needle. They are pushing the eye through rather than the point.

Why does she use/hold the needle like that?

They're using the eye if the needle rather than the point to push through so they don't split the yarn of the sweater. They want the needle to go around the sweater's yarn and through the natural spaces so the sweater stays strong. You can also use a blunt tip needle for this but they might not have one in the right size.
