Today I’m going to show you how to make your own yellow pickled radish, called danmuji in Korean. It’s a crispy, tangy, refreshing side dish and an essential ingredient in gimbap, Korean seaweed rice rolls. Full recipe: www.maangchi.co...
I know that some of my regular readers and KZbin viewers have been waiting for this recipe for a while. Thank you for your patience! I’ve actually been working on this recipe off and on for years, and after much experimentation, I’ve come up with this delicious, accessible, foolproof version anyone can make!

I’ve recently become obsessed with danmuji after trying some at my local Korean market. I tried to buy some already made, but there were so many additives in the brands they have. I’m so happy I found this video! I will begin the pickling process after my next grocery visit. Thank you so much! ❤ 🙏🏻

I love the way you cut your vegetables and keep as much as possible! I hate waste--especially food waste--and while a trip to the market these days is either an adventure or even a risk, I try not to waste food even more than before! And keep trying to tell my kids how important it is (they are doing a lot of the cooking these days). I have one daughter who loves Korean culture and especially the food. We are enjoying your videos so much!!! And I am glad she learned something simple (in addition to some new recipes)--cut your veggies carefully and keep as much as possible!). Thanks again! In the interest of finding ingredients locally, for those of us with no Korean market, you could probably use a small amount of turmeric for the coloring agent without effecting the flavor profile too much.

I am really happy to know your recipes, especially this one. I love Takuwan, Japanese name for Danmuji, very much, but couldn't buy those on the market, because they were soaked in chemical additives. I already made your Mandu-pi. It was so nice! Thank you, Maangchi.

maangchi, thank you for answering the mystery of my life. it started when i watch one of the korean series around 10 years ago. and everytime i watch other korean series with food in it, I ALWAYS SAW THIS YELLOW THINLY SLICED SIDE DISH. i never knew what it was. i even thought it was mango but i am so wrong.. it's fermented radish all this time :D God bless!

OMG that lunch box look delicious! Whoever got to eat that lunch box is so lucky!! When you were cooking that gardenia fruit, it remind me of annatto seed, which is something my mom use to color food orange yellow like that. Though I only know that the seed is activated by hot oil. Thanks for sharing this pickled radish recipe.

My 엄마 taught me to use turmeric for the color! Easier to find and still a nice yellow color. Also she always called this one “dakwang”, which is the korean pronunciation for the Japanese term for pickled radish, “takuan”

Yes, my parents and grandparents generation call it “dakwang”. I thing danmuji is what younger generations say now.

I've found danmuji in the nearest grocery store. They sell one big radish around IDR 50,000 which is KRW 4,105. While I'm not sure whether it's cheap or expensive, one thing I'm sure of, I don't think I can gobble up one big tube of radish alone XD I'll try following your recipe instead. Just need to get smaller radishes.

PratoFundo danmuji isn't a korean dish. it's a korean-style version of japanese takuan and korean people like it but i wouldn't call it korean.

I once bought takuan in our local supermarket thinking it would be as delicious as danmuji, but no, it smelled really bad I couldn't eat it. Maybe because I didn't wash it before eating? I don't know. The taste was different, too.

놀랍네요. 한국에선 안만드는데. 다들 까먹었을거에요. 치자도 오랜만에 보내요. 어릴적에 집에 치자나무가 있었어요. 엄마가 전에 색을 내기위해 건조시키던게 생각나요. 유행하는 음식뿐 아니라 기억속의 음식도 레서피를 만드시네요. 한국에서 잘 보고 있겠습니다.

She said it will be alright but if this is just for a color, i think i can make it without gardenia seed or tumeric. i do eat tumeric and it has a distinctive flavor, definitely not korean.

Thank you for sharing this recipe. I absolutely love eating this but the ones sold in the Asian stores have MSG and I have even seen high fructose corn syrup as an added ingredient in the packages! 😲😲😲😲😲😲😲😲😲😲😲😲 so I haven't had any of this yummy treat for such a long time! I'm going to make a lot of this now that I know I can do this! I absolutely am so grateful that you took the time to teach us how to make this! In fact, gardenia seeds are used in Japanese cuisine as well, usually in kinton. The Japanese name for these is "kuchinashi".

I replaced gardenia fruit ,by turmeric. Works very good for coloring too.

Where I live, we make a sweeter pickles and use food coloring; since I didn't like the artificial color, I just leave it the natural color~tastes good! Oh, and we slice the turnips from the start.

Hi Maangchi, I just finished my first batch and tomorrow will do another two batches for friends who I know will ask for some in four weeks time. Those of you who are looking for Gardenia Fruit go to the Chinese herb store and ask for Shan Zhi Zi. I tried to paste the Chinese word but it did not take. Copy this into your phone to show the assistant, because when I went they asked me to say it in Chinese. I have tried to say it about fifteen times and my tongue just can't make the right sound. Anyway on Amazon it is $26.00 + $6.49 S&H for a pound, at the Chinese Herb store $7.99 for a pound.

Corinn Heathers They're both pickled daikon, but the ingredients differ a little bit between Korean and Japanese recipes.

Corinn Heathers takuan has persimmon peel in it. i never heard of putting gardenia seed inside it. but it looks good. and takuan you dry it outside with the leaves on hanging. for like a week till you can bend it in half. i'm still going to try this way. it looks easier.
