been playing since g3 and didnt know most of this stuff lmao, just been clicking stuff manually this whole time. really helpful stuff here, appreciate it! gotta ask though, im not even really endgame but transformations are already really falling off for me, is there really that much benefit to having it in the top bar?

The transformations act as extended invulnerability frames during their animation, so they can be used to dodge attacks or some mechanics that would otherwise kill the player. Especially demigod with Morrighan support, Wings of Eclipse is useful for a number of boss fights. After clearing G25 you obtain a technique (Seal: Pragarah) that requires demigod to be active to use it, and it's a very good technique for mages and alchemists. Aside from that, G2 trans provide mana deflector which prevents you from being frozen by Ice Spear, which enemies eventually start using against you. There's a good number of use cases, but none of them are really used as a power boost the same way they are used early on.

I've been looking for a video like this...the problem is that I see a lot of these hotkeys have more than 2 types of talents on their hotkey setup. Is that because the player opted to buy equipment slots? I'm not exactly one to buy those so I don't think I'd be able to utilize more than 2 talents per setup...

Yes and no. You can still manually switch equipment for key skills, but it requires more effort. Before equipment slots existed and the Iria Sagas were still new content, I frequently switched between fighter, alchemy, archery, and bard setups mid combat to have damage of every type by using CTRL+click on the gear from my inventory. A more modern example, since we have more talents now, might be an easily accessible Shuriken you can equip from your inventory just for shadow cloak even if it's not your primary or secondary weapon normally. Alternatively, combat/combination VIP and equipment slot expansion can be purchased with gold on the AH from other players, and equipment slot time can be purchased through both commerce and the dungeon guide. It's something to consider later down the line if you have any aspirations for end game level content. Although it's never needed to use more than 2-3 talents at once, the higher difficulty content assumes your party as a whole will at least have access to most weapons/skills for utility, buffs, and debuffs. It takes a little less planning ahead with extra slots. For example, preparing for bosses with hit checks that require dual guns before starting the boss vs. having guns already ready in an extra slot.

does using control + 1 for your quick skills from the skills tab not bring up the menu in the bottom left, how do u get rid of that.

If you hit the Windows key (or Command key on Mac?), it opens the menu. I'm not sure what would cause CTRL or 1 to do that. If it's a hotkey, when you attempt to bind it, the settings window will tell you what it might already be bound to and confirm that you want to change it.
