I have made this a dozen times now, and about to again. It's so beautiful. The formula of one part, two parts etc really works, no matter the quantity needed. I even coloured it. Now to finish my dads cake. Lol.

I made the SMB. yesterday and it was beautiful my only fault was I didn't dissolve sugar enough, I also added abit of vanilla extract and since I wanted a chocolate buttercream I added melted chocolate will alwAys use SMB now as it is delicious and no where near as sweet as regular buttercream :)

Kursti Marten Glad you like this - some people try this and don't like it because they are use to the taste of regular american buttercream which is super sweet. This is sweet but not super sweet & it's light & fluffy & melts in your mouth like butter. I guess it depends on what you are use too ; )

i noticed allot of people wondering how many eggs although it is easy enough to measure but as im making this now, it is roughly about 3 medium eggs, but lovely recipe and i will be trying out allot more thank you xx

Kimscuticles Yes I think it was - the ingredient photo shows how many eggs there was. I just measure everything by weight but it doesn't have to be exact ; )

Andrea, this is my go-to SMBC recipe. Love the simplicity of the amounts! How would you make it chocolate? I've seen people add cooled, melted dark chocolate, but how much? And would you change any of the other ingredients? Would appreciate your thoughts. Thanks!

Hello! I love what you do! I have a question. I live on a tropical island where the humidity is always very high, around 60%. It's also very hot, around 28 degrees in summer. I would like to do the swiss meringue buttercream for some cupcakes. Should I keep it in the fridge or is it ok to leave my cupcakes at room temperature for one day. Thank you!

Yes you can but use the better quality ones like Americolor gel ones. I don't normally colour mine but that's what've heard is good. I do add coco powder for a chocolate flavour ; )

Hey thanks for the video - does SMBC colour as good as regular buttercream? What type of colouring is best for SMBC? I tried making IMBC and the colours bleed quite badly and they crowd in specks. Thanks!

I would think that it would be easier to do a "starter" recipe with how many eggs etc, and people could just double, triple or whatever if they want more? Just a suggestion.

Hey Andrea, I finally tried your recipe! :) the only thing I tweaked from the original recipe was cutting the sugar amount, I used only 100gr sugar. Love the texture, definitely will keep and use this recipe! Thanks for sharing :)

Miya Breeden It doesn't taste like traditional buttercream as it's not as sweet. It's also silky smooth in texture & taste compared to regular buttercream. So yes I guess it would be more like a whipped icing as it is whipped up.

I measure the ingredients by weight in grams (or whatever weight measurements you use) so if its 100g egg whites then it's 200g sugar & 300 grams butter. Hope that helps ; )

I mean whatever your weight is in egg whites (e.g. 50grams) you double for the sugar (100grams) and triple for the butter (150g). I measure using a kitchen scale ; )

I measure the ingredients by weight in grams (or whatever you measure it in) so if its 100g egg whites then it's 200g sugar & 300 grams butter. Its not the same as cups. Hope that helps ; )

I made it yesterday and I added half a teaspoon of vanilla extract and cause I'm wanting a chocolate buttercream I just added melted chocolate, my only fault was I didn't dissolve sugar enough but I now know for next time but it was a beautiful buttercream know where near as sweet as your normal buttercream I will only ever use SMB. now that I have made it :)

My egg whites sugar mixture turn white right away. There's still sugar on sides of bowl. It doesn't look like yours. What did I do wrong?

+Candace Johnson I've never used it under fondant before, but a lot of people do. But since it's mostly butter, it's not recommended to leave in the heat. It will melt. It tastes delicious though!!
