Chettinad Famous Kavuni Sweet
This sweet is mandatory in chettinad cuisine lunch meals
Kavuni payasam or kavuni halwa
When it is hot,it is in payasam consistency
when it is cool,it is in halwa consistency
This kavuni sweet has heavenly unique taste
Kavuni rice (black rice) is available in supermarkets
1cup black rice
One of the traditional rice varieties which has
enormous health benefits
color of this rice gets brighter after soaking and cooking
Nice deep purple brownish black color combination
source of plant based protein
rinse well 2 times to get rid of dirt
Black color in this rice is because of the anthocyanin
pigment which has antioxidants
Improves immunity
good for heart,eyes,brain
soak overnight
4 cups of water for 1 cup of black rice
using the soaked water to cook without wasting it
black rice is rich in anti cancer properties
rich in fibre and aids weight loss
prevents PCOD in women
Good for diabetes
keep in high flame till steam comes
steam comes .Keep in sim flame and put weight
cook for 15mins
open after gas released
check if the rice is cooked soft
if not,you can cook for some more time
mash it
dont mash fully
it is thick and blended well after mashing
cook in medium flame
1cup shredded coconut
mix well
ghee 5tsp
1/4tsp cardamom powder
1cup powdered jaggery
let it melt
ghee 5tsp
it boiled well and it is shiny
off the stove
you can keep in room temperature for 1 day
In fridge for 2 days
