🛒 Ingredients (10 units of 5 cm / 2 in base):
🔸 190 g all-purpose flour (1 ⅓ cup)
🔹 120 g sugar (½ cup)
🔸 3 eggs M
🔹 60 ml orange juice (¼ cup)
🔸 125 g sunflower or light olive oil (½ cup + 1 tbsp)
🔹 Zest of one orange
🔸 Pinch of salt
🔹 8 g baking powder (½ tbsp)
🍳 Directions:
1️⃣ In a bowl beat the sugar with the eggs at room temperature until they whiten and double in volume.
2️⃣ Add the orange zest and mix for a few seconds. Pour in the orange juice, beat again. Then, add the oil and beat on low speed until blended.
3️⃣ Mix the flour with the salt and baking powder. Add it in batches to the mixture, sifting it with a sieve. You have to mix until it is combined, not longer to avoid losing the air that we had achieved with the eggs and sugar. Finish going over the walls and the bottom with a spatula.
4️⃣ Place the muffin papers in the mold, distribute the dough inside each one, filling about ¾ parts. Cover and refrigerate for 30-40 minutes, while preheating the oven to 220 ºC (420 ºF).
5️⃣ Sprinkle a little sugar on top of the muffins and put them in the oven. Once in the oven, lower the temperature to 200 ºC (390 ºF) and bake for about 15 minutes.
6️⃣ Remove the muffins from the mold and let them cool on a wire rack.
7️⃣ Store them in an airtight container or closed plastic bag to keep them from drying out.
👌 Notes:
🍊You can replace the juice with milk and use for flavoring lemon zest, cinnamon, vanilla....
🍊If you don't want the muffins to have a high top, bake them at 180 ºC (350 ºF) for about 20 minutes.
