Guanyin is a bodhisattva like Wukong eventually becomes! She is the embodiment of compassion, mercy, love, and kindness and the feminine version of the the male bodhisattva Avalokiteśvara, whose name translates to "one who hears the world's cries"

so about the jupiters rival thing. Since the chinese zodiac does not follow the lunar path but Jupiter's path (making it a 12 year cycle) the sign exactly opposite of the current sign (the one jupiter currently resides in) is called its rival. as Jupiters rival (that year it seams) is a Dog it must be a year of a Dragon. Basely it just tells us that we are now dealing with zodiac and celestial power level demons. as a sidenote, none of these higher level "demons" are interestet in eating tripataka since they all already posses immortality in one way or another.

Journey to the West, itself, is old but not *that* old. The book was written in 1592 (Ming dynasty) by author Wu Cheng'en. The stories he collected for the book are much older, however, essentially folklore in his time, and Wu worked them into his enlightenment allegory. Some elements have been traced back to the Southern Song dynasty (1127 - 1279) in written form with others as oral tradition going back much farther.

If you like Mythology I would reccomend the channel "The Mythology Guy" He recently did a Mythology Inaccuracy video on the recent "Black Myth: Wukong" which is journey to the west. He also does ALOT of greek mythology as well and is both informational and entertaining. (My personal favorites of his are the reveiws of the Perry Johnson movies and Disney Hercules)
