Thank you for this inspiring video! I had wonderful success with your recipe. I was a bit short on millet flour, so I used buckwheat for the remainder and it was wonderful! Having celiac disease, I am learning new ways of eating delicious gluten free breads and I will keep this recipe in a “love it” category!

Can you tell me what you did coz I tried it and my bread came out gummy, heavy like a rock, and it rose but not like hers. I baked it in a tin and put that in my Dutch oven. Stressed!😢

I love your recipes! My everyday bread is a sourdough but with wheat, I'm interested in trying a millet bread. The recent recipes you've shown with psyllium are inspiring me to try it out soon. Also I've been using your starter method instead of feeding up a larger starter the night before I bake and it's working great. Simple is perfect! Have a great weekend!

This looks great. I’m going to try it. I am back to making sourdough thanks to your last gluten-free sourdough video! My family loves it. I subbed sorghum for the millet in the last recipe and it’s so good. I’ll try the all millet loaf next. My kids love millet porridge for breakfast so I’m sure they will like this. Thank you again! 😊

I would love to give this a try but I'm still restricted by my life circumstance of caring for my elderly mother. I can't wait to get a Mockmill and make these less usual loaves plus the old faithfuls. I love the way you try different grains and methods Elly. Have the roasting dish, the banneton, and all the little necessaries (I even got the last one of your newish scraper to replace your old much cherished one - thanks for the link!). I have a few things x 2 since I have 2 grandsons. They are still little, but am looking forward to having grandmotherly fun with them in the future. As always Elly, thanks for this recipe. I love using a variety of grains too, it's all good for our microbiome 😊 🍞🌾

When it comes to the crunch we are primates like gorillas, orangutangs, chimpanzees etc. We share at least 98% of their DNA, so I think we're meant to be eating plants. If you think about all the big critters on this earth, they eat plants of one kind or another. Cats are carnivores. Dogs might be more omnivore since domestication. But we're like the great apes (well, we *are* great apes), elephants, bison, cattle, ungulates, etc. It's a plantiful world really, including unusually eaten grains in our bread! Wonderful (rant over 😂)!

Hello, During lockdown I followed your inspiring recipes and baked several times a week. Since then, my poor starter has sat sadly at the back of the fridge. However, I’ve got the urge to start again and as I’m having to eat gluten-free at the moment, and then this video popped up I’m going to have a go! I’ll get a new starter sorted (Vera 2) and we’ll see what happens. Thanks so much. You make everything seem achievable. I’ve had more than a few gf failures so far, so cross fingers that getting back to sourdough will do the trick! Hilly in the U.K. x

Great bread!!! Presently I am feeding my sourdough starter on a daily basis because I am going to use it for my Easter buns (tsourekia) and because my relatives do not like very much the sour bread taste I am feeding it to get it more mild. Have a great weekend!!

Thank you. No the starches aren't necessary, but they do help keep the loaf lighter. I'd bake this in a tin if not using starches.

Lovely loaf of bread! I'm just discovering millet as a porridge, will have to try the bread. Could you share the dimensions of your baking pan and what it is called? I like the idea of loaf shaped rather than circular, and the pan you are using seems multipurpose. Is it made of cast iron?

Thanks Anne. It's hard to find these roasters now, but it's a Baccarat brand, which I purchased from House here in Australia. It's cast aluminium (nice and light).

Hi ,so glad to see your new video ,just right on time.I used to make sourdough bread but now I really cut cut down my wheat but since your video on sourdough gluten free with the fermented oats, it is stuck in me .RIGHT NOW IM SARTING TO FERMENT MY SMALL BATCH OF BREAD FLOUR IN ORDER TO MAKE A SOURDOUGH GLUTEN FREE WITH A TWIST, GUEES WHAT USING YOUR VIDEO IN ORDER TO MAKE YOUR TYPE OF SOURDOUGH BREAD GLUTEN FREE BUT OF COURSE IT IS VERY LESS GLUTEN FOR IN MINE I WILL ONLY USE 50 G OF STARTER TO FERMENT 400G OF GLUTEN FREE,OVERNIGHT TO SIMPLY BAKE THE NEXT DAY. OK NOW IM GOING TO FINISH THE VIDEO ,I WAS SIMPLY OVERJOYED TO SEE ,MY NEW IDEA IN A VIDEO BY YOU.WHAT A COINCIDENCE. I have a big quantity of gluten flour with me I don't want to go to waste so I must use it somehow Although I know I must stick to gluten free bread. But I'm in love with simply with sourdough. So a combination is tolerable .until I keep the gluten as low as POSSIBLE.

This is by far the best recipe I have found that actually turned out. I am on a cleansing/detox diet and only grains aloud are millet, brown rice, buckwheat and quinoa. My loaf rose beautifully, it did need more salt though so next time I will add more. Thank you! Oh and I ordered a mockmill since I was so impressed with how it performed and looked. Will you let me know if this recipe could work for buckwheat in place of Millet?…or if you know of a simple buckwheat recipe?

The variety is called 'French White', but it's just a regular yellow coloured pearled millet.

Beautiful recipe and channel! I don't have a mill ATM, but a local store carries Bob's Red Mill's millet flour. Anyone know if I should reduce the water, and if so roughly how much? I know freshly killed flours tend to be "thirstier" than store bought. Or would going by feel be sufficient after the flax and psyllium have hydrated?

I have coeliac disease and am very grateful for gluten-free recipes. I also have a Mockmill, but whenever I grind millet, the flour becomes very bitter. What am I doing wrong?

Hi, that doesn't sound like you're doing anything wrong to me, it's more likely an issue with the freshness of your millet? If the flour tastes bitter, the grain would have been bitter too. Yes you could, it will probably ferment faster though! And it will taste quite different. I'd try it with just a quarter of a teaspoon of yeast.

Hi Elly. So good to see an Australian youtuber to be making sourdough gf breads. My daughter has got multiple food allergies and craves a good healthy tasty bread. I will be making these very soon. Could you please tell me what brand of millet you use? Also where do you buy the whole grains from? Is macro hulled millet ok to use from woolworths? Thanke so much !

That's wonderful Pooja! Thank you. I buy my millet from Sovereign Foods here in Brisbane, but any whole millet will work I think. If you can get whole/hulled millet and grind your own flour, that will make the best, freshest tasting bread.

I wonder though if soaking millets and grinding to a paste and adjusting the water content will keep the anti nutrients of millet and other grains in check. I cannot play with the dough then and also cooking times will vary. We do that with like dosa batter, which is also fermented. I will give it a try and let you know but first i will try your recipe. Hopefully, the sour dough starter makes the anti nutrients blocking absorption of vitamins negligible. Any thoughts on this? Thanks

I think it would be too wet if you soaked and ground the grain as you do for dosa/idli batter. It needs to be more dry like a bread dough. I would not worry about anti-nutrients. You are soaking, fermenting then baking the grains - it will be very healthy for you with no problems at all I don't think.

Yes you can, but I've never made an all sorghum loaf so I'm not sure what the ideal hydration would be.

Texture is light, slightly gritty (but not in a bad way, just in a freshly milled stoneground millet kind of way) and the flavour is perfect. Mild, not sour, a bit naturally sweet - just a good tasting loaf of bread! Best enjoyed fresh on the first day, I like it toasted after that.

I was reading about millet and it turns out there at least half a dozen grass species that are sold under the name millet. The most common though seems to be pearl millet (Pennisetum glaucum).

Hi, yes I think mine is pearl millet, but at some stage the supplier was calling it 'French White' millet. Go figure! I'm not sure of the exact variety, but it's the common, yellow coloured one.

Thanks for this easy recipe! I made it yesterday with finger millet flour from the Indian grocery store. I've been making and eating only gluten-free (mostly sourdough) bread for over a year now. I came across your low discard sourdough starter recipe a few months ago and have been sharing it widely in the gluten-free sourdough baking groups on Facebook to which I belong. I'm excited to try the method you used in this recipe with other grains. This loaf turned out a beautiful dark brown with the finger millet. I'm enjoying a grilled ham and cheese sandwich made with it now. Thanks again!!!

I made the recipe yesterday. I followed your instructions to the letter. I even cooked it to the hour but unfortunately my bread was gummy on the inside. I cooked in in a tin and scored it down the middle. It tried to have the crumb but it was heavy, thick, gummy. The parchment paper stuck all around which is odd. I used a sourdough millet starter, and the Millet flour was called Parso Millet flour. I am so disappointed because I thought surely it would come out beautiful. It looked beautiful but the finished product was bad. 😢 Oh by the way when sliced it was stringy looked like pieces of little string cheese was inside. I give up!

Oh dear! That does sounds a bit odd. I wonder was it perhaps overfermented?

@@ellyswholegrainsourdough I don't know how that could be. The bread just came out bad. I question my sourdough starter but I'm not sure. I took it out of the frig but even still it never really bubbles. It's Millet flour. I may have to start afresh and see if being that was my first sourdough starter qas the problem.

It is gluten free. If you follow the recipe in your gluten free kitchen. It’s completely gluten free. Very weird u think it’s not. I’m very grateful for it, bc my son and I have celiac. It’s so hard to find good r3cipes with little to no starch
