If anyone's wondering why she put the kiwis up with a few apples to soften, it's because apples-especially ripe apples-give off something called Ethylene Gas, which signals fruits and vegetables to kickstart their ripening process into overdrive. That's where the phrase "One bad apple can spoil the whole bunch" comes from. When an apple reaches the end of it's life, it starts producing Ethylene like crazy, which will cause a chain reaction in any other fruits and veggies stored with it. Bananas are also big Ethylene producers. If you have some under-ripe fruit, you can just toss them in a paper bag with a ripe banana and they'll be good to go in a day or two.
