AW Thanks you guys :) You could also totally replaced canned tomatoes with a fresh plum tomato too that's what I would have done if I didn't have the other half of a can of tomatoes from prep for chili. Although I guess you guys could use a whole can since you're making enough for two so that's not even something you have to worry about haha!

Good recipe, washing up is simple, water in dirty pan some washing up liquid, put on stove, bring to the boil and let simmer for 5 mins, dispose of and dry the pan, whilst that’s happening, grab a beer or a cider.

Ok I am not much of cook but this is what I take on a two day trip for meals. I loaf of Mollenburg toast sliced bread. Make up alternate sandwiches using peanut butter (I think you might call it peanut jelly) and Marmite (it is a kiwi thing). Place sandwiches in the plastic bag bread it came in and store in topbox. Lunch two sandwiches, dinner two or three sandwiches, breakfast one or two sandwiches and repeat. Extra loaves for longer trip. Well it works for me.

I first had this in Morocco back in the mid 80's I make it quite regular, love it, I usally do 2 eggs. Tunisia and other country's in the region all have simler version. Enjoy 👍

Great recipe and some really good tips in there too. Is it too late to call brunch? too early to call it dinner. The you my fine friend have discovered Linner. End screen crew in da house! If my only choices were cider or beer. I would go for beer. I know I know I talk too much but now I have to report that the GoldWing is back together, runs like a clock, all electrical is working as intended and all I have left to do before the shake down rides begin is replace the rear master cylinder and caliper. Sadly they were victims of the previous owner not bleeding the brakes and were completely frozen. I got them both to break loose but even with fresh fluid they won't release properly and drag, Water in your brake cylinders is bad lol. The new master cylinder and caliper should be here next week. If all goes well during the test riding phase the scooter will be ready for RMR6 I am soooo excited!!!!

Not all cheeses are created equal! Parmesan is a good choice if you don't care for feta, though, as it's nice and mild but still salty. Baybel is delicious and convenient and I'm sure it went well in the dish. I've actually considered shakshuka for camp breakfasts, since I've got my own chickens and can get eggs that won't need refrigeration. I've made it at home for a few dinners, served with some crusty bread. Also, beer! Sooo many options are widely available, and there are some good quality ones that can be served at somewhat warmer temperatures without suffering. I like to try something new whenever I get the chance, especially when traveling. Local breweries are wonderful

Hard cider is awesome, but (and this is strange) I've found nothing hits the spot like a probably-not-so-cold Guinness at camp. As a bonus, I haven't had a can explode / foam over yet, and this is usually after riding a few miles on jeep trails as I'm usually boondocking it.

Cider is best. Also they say you have to keep eggs refrigerated. Do you just pack your eggs the night before and hope they stay good?

If you use fresh from the farm eggs that haven't been washed (so they still have their protective layer on the outside) they won't go bad if they're not refrigerated. In my personal experience store bought eggs are fine for a day or two unrefrigerated (as long as it's not like 80+ outside). That said, that is just my experience, others' may vary.

Wishing you all the best for your super long trip! PS: Could you share your exp. on how do you go about keeping eggs fresh on trips that are a say 3 to 4 days. Is it safe to have them when not refrigerated/ room temp?

Only fresh eggs from the farm that have not been washed or scrubbed are safe in non refrigerated environments. So your best bet is to get eggs direct from a farmer or someone who owns chickens and make sure they haven't scrubbed it or some more than wipe feathers and poo off of the eggs. There's a membrane on the outside of eggs that is normally washed off or removed for commercialization which exposes the egg to more bacteria that's why US eggs have to be refrigerated. I would not keep store bought eggs unrefrigerated or not chilled in ice in a cooler for more than a few hours in the summer time. This video was filmed in early spring when the temperature outside was max 55, if it's chilly then I don't feel too bad about having them not in a cooler or anything for a day or so.

haha most of the time I only go "all out" for dinner, breakfast on long trips are def not this nice, but these overnights or weekend trips really gives me a lot more room to meal plan and make sure I make meals for dinner that I can use the leftovers of to help make breakfast and so on, it helps reduce food waste and dealing with making too much food. I'm not vegetarian, I get why people think that because of what I eat at camp. I'm just heckin lazy. I don't want to worry about cleaning up after raw meat, or worry about keeping it cold in transport, or worry about it getting cooked all the way, and I hate most canned meat lol *shrug*

@@AstheMagpieFlies I find sausages usually survive if you pack them in frozen. Steak does well in the same way, a couple of cheap frozen water bottles help them stay cold too. :)
