Sometimes we put all the taco fillings in a dish, similar to a 7 layer bean dip, and then eat it with chips instead of using tortillas. You could also use pita pockets instead of tortillas. Happy birthday!

The rest of the world calls those “quesadillas”. 🙂 You should look into what is commonly referred to as a “tractor oven”; it looks like an old-time lunchbox and plugs into the 12v socket and heats your food up for you as you drive along the road or trail. We have one and it works a treat.

We call them quesadillas too. I do it exactly the same but leave the tortilla whole and flip it with the contents inside. I then cut them in to 4 equal pieces.

Happy Birthday, Pam! That looks so delicious. As a latina, I would call those quesadillas. Usually, quesadillas are sliced into quarters and then served with a side of chopped lettuce and a bit of tomato with guacamole and sour cream. Looks delicious and I want some now...at 3 am my time. Got on here specifically to wish you a happy happy birthday. You surely don't look or act like an 80 year old. I will be 73 this month. I'm proud to say I do pretty good (stenosis of the lower back) and have no real complaints. But I gotta say....... girl, you could run circles around me. Thank you for this great idea! I like to use round cheese wraps to place on one side of the heated tortilla and then put my filling in and fold. The cheese really helps to keep the tortillas from cracking (as you mentioned) and also adds oil so maybe only spray one side of the tortilla and not use so much of that (LOL!). Anyway, great idea!

I will be 84 in September. I am starting to freeze drying, just for fun. No storage beyond a few days maybe up to a year. I have pretty much done every other type of preserving, as well as gardening and animals for and processing for food.

Happy Birthday weekend, Pam! I make what you are making which I can freeze if I want. I do make them slightly different; I will share.-- I make the whole tortilla with meat and cheese with a slight amount of cheese first, then the meat, then a good serving of cheese to stick the tortilla together. We fry till brown. Then cool, cut in half, then put 2 in a plastic zip bag to freeze. We usually don't eat them cold; we'll have to try that with salsa you suggest. What we make ours for, is to heat in the microwave when we travel so we have a healthy snack in the hotel. Another thing we like taking FROZEN and eating cold or heated are salmon cakes.. yum.

Additions besides salsa could be jalapeños, sour cream, creamy jalapeño dip, guacamole, fresh pico, and/or queso. Queso would need heating so not as easy on the trail but delicious none the less. We make these with leftover taco meat all the time. Yummy!
