Adobe, ideally, is made from sand, clay, water, mixed runny or damp. If runny, it needs to set/dry in a form. If damp, it can be pressed or compacted or rammed into a form and the form removed immediately. If the mix had no cement the adobe needs to be water-proofed or it will quickly crumble in rain. This can be painted on or plastered on as a solution that binds with the adobe before it drys. However, it is best to incorporate the water-proofing binder in the mix. Emulsified asphalt, which occurs naturally in pools, is excellent in the mix or painted on.

How old are you, 5? I played in mud, making dams, small structures, no instruction needed, at 5. I had heavy clay earth, so it formed easily. I made little figures. I learned by doing.

I don't think there is a one size fits all answer to that question. It depends on what your goals and resources are. I would argue that all three are equally aesthetically pleasing once finished, but each in their own way. You can work with cob right away but can only do one layer at a time before waiting for it to dry. Cob might be better if you have less time or if you have less people. Adobe takes longer to build the bricks, but once the bricks are made, then your only limit is how many people you have to work and how fast you work. Earth bags require the least precision and can be built the fastest, but there is the cost of the bags and barbed wire. The other methods require only labour. So economically, it depends how much money you have versus how much time and how much help. Those are all things that should go into deciding which one is best for you. You also might wish to consider the shape. If you want something more workable and creative, then cob or a combination will give you the most flexibility.
