We used an Ice cream scoop (the kind with a spring handle) to measure the burger meat where I worked

I bought a plastic burger press from the Dollar general and it works great. Can't adjust the thickness and you have to grease it before use, but it works great and I probably paid like $2 for it.

I have a similar gadget but I bought it at harbor freight tools. I think it was $5. It's a lot smaller than reds but makes perfect 1/4 pound patties. I didn't know about the paper so I'm going to check that out. Thanks Red!

Not wearing gloves but it is my hamburger. Yes! I have seen so many videos where someone will criticize or instruct the cook about using clean hands on their food. Who the hell cares? It is their food and they are the one who is eating it. I don't always wash my hands when I am cooking and I ain't dead yet.
@CookingwithShotgunRed4 жыл бұрын
He washed his hands a'lot right before he started filming and he also had a bowl of water off screen with water and a towel to wash cause that gets the meat off his hands easier also. But that is right he was in his own home like most everyone else is. Glad your not dead yet, We want you here watching these shows and cooking up some great meals! :)

I guess people dont understand why we cook meat in the first place.
@holderbee78114 жыл бұрын
The gloves are not to protect the burger. They are worn so you can take them off after touching the burger, and you don't get bacteria on everything. In food service it's a lot easier than washing your hands all the time

Animal blood is a biohazard until its cooked. There is such things as zoonotic infections as Covid demonstrates first hand, having come from bats used as food. And given his treatment of the cow, i doubt this guy wants to travel to India, the point being thst some other cultures in the world consider the cow not to be eaten in the manner we view the bat.
@Harlem552 жыл бұрын
@@holderbee7811 use of gloves is not a substitute for proper hand hygine- as your hands sweat in the glove youre creating a petri dish inside the glove, being warm, dark and wet. They did some research where they wore a pair of gloves for an hour, the gloves were removed, and then collected swabs, with normal hands and then hands that had been subjected to a full surgical scrub were swabbed as a control. The species found on the hands that had been gloved had particularly high couns of S. Areus ans S. Pyrogenes. Both of these have potential to be antibiotic resistant and therefore potentially can cause rather severe infections.

Miss you, Steve! I make my own patties almost exactly like yours, but I use a small digital scale to weigh mine. 1/4 pound, 1/2 pound, etc. Don't forget that you can press the thing shaped like a dome at the very top of the patty press to really help flatten the patties. But your patties looked perfect either way!

Screwing it down is a good idea. I use a scale to get exact weight for consistency. Make a ball with 113 gm for 1/4 pounder then squeeze away.
@rick-ps5ct2 жыл бұрын
I bought a press at harbor freight.$5 or $10..can't remember...got a 10# digital scale at Aldi's for $10..it weighs up to 10# at a .10 of an ounce...every patty can be same weight and not have to pound it out of measuring cup...roll into a flat ball first, then use patty press...

Really enjoyed the video. We purchased one of these and the first time it worked great . the 2nd go round was not so good. Glad I found your video on how to use the press After seeing you do the wax paper trick, I will try that next time. I think our meat was a bit to warm as well which caused an issue when making. Do you chill yours before mashing ? Thanks for a great Video on how to use this. Question maybe you can answer what is the purpose of the plunger ? I see no reason for having a push capability and yet ,you can't push it down
