Following a recipe from the kitchens of King Richard II, I made my interpretation of a medieval apple pie. Though the recipe was very vague, I had lots of fun figuring out what spices to use, what quantities, what type of pastry to make, and finally tasting what a medieval apple pie would have been like.
I hope you enjoy the video, and try and bake this pie yourself!
This is my interpretation of the recipe:
For the Filling:
4 Apples
2 Pears
5 Figs
1 Cup of raisins
1 tablespoon of cinnamon
1 teaspoon of ginger
1/2 teaspoon of nutmeg
1 teaspoon of saffron
For the crust:
225g of Flower
150ml of Boiling water mixed with 1 teaspoon of saffron
